On iPhone/iPad, Waterspeed doesn't delete tracks but marks them as deleted. So they will be always available and ready to be restored from the 'Undelete/Trash' button on the Diary page.

On the Watch, you can delete tracks only after being synced with iPhone. you can access your tracks from the orange button, Diary, on the settings page. Delete tracks on Watch will be really deleted.
